  2. Oof!! I can’t wait to make this, I have a glass plate stove so unfortunately don’t own any cast irons- can I use a regular pan? Medium to high heat?

  8. I made this yesterday for dinner and loved it. I t was surprisingly easy to make, but I might oven roast the eggplant next time. This is a wonderful low carb recipe, too.

  14. I made it last night and everyone in my family loved it. I roasted the eggplants in the oven instead of pan frying and even thought I had brushed both sides with oil, some got stuck on the foil. Also, the eggplant slices became too soft. How to I cut the eggplant so each slice is even?

  15. Made this tonight, very tasty but it did take quite a while to make. A lot of steps. Might add olives and mushrooms to filling next time.
    Tip: choose wide eggplants, mine were long and skinny so couldn’t fit as much filling in.
