INGREDIENTS:
2 Courgettes
500 g Turkey Mince
400 g Chopped Tomatoes
75 g Chopped Carrots
75 g Chopped Onions
75 g Chopped Celery
25 g Tomato Puree
120 ml Water
Worcestershire Sauce
75 ml Olive Oil
1 Garlic Clove
1 Bay Leaf
1 Sprig Rosemary
STEP 1: COOK VEGETABLES
Heat the olive oil and add the garlic and season with salt and pepper. After a minute, add the carrot, onion and celery and cook until soft.
STEP 2: ADD MINCE
At this point you can pour in the water and Worcestershire sauce and fry on a high heat for five minutes. Add the mince and fry for a good ten minutes until the turkey is properly cooked through.
STEP 3: ADD TOMATOES AND SIMMER
Add the canned tomatoes, puree, bay leaf and rosemary. Reduce heat and simmer for up to 90mins. Season to taste.
STEP 4: MAKE SPAGHETTI AND SERVE
When your mince is ready, use a spiralizer to cut the courgettes into spaghetti. Put them straight into salted boiling water for no longer than two minutes. Drain and serve in a pasta bowl with a generous scoop of the mince on top.

Is there a reason you didn't cook the spiralized veg in with the sauce? Does it make a difference or is it a texture thing?
You add 'puree' but don't mention what it is. 🙂
