I was under the impression that using store canned tomatoes was a big no. In my ball complete book of home preserving I found this taco sauce recipe and it says in the tip section purchase larger cans will make measuring quicker and easier. Have things changed regarding the use of store canned tomatoes and is this now an acceptable practice? I wanted to make this chicken wing sauce but ran out of my home grown tomatoes. Does anyone have any sources regarding the use of store canned products?

    my understanding is the problem with using pre canned foods in canning them again is that they would break down too much. in the case of the taco sauce it wouldn’t matter because you’re cooking it down to a sauce.

    Keep in mind also that the recipe was tested using the commercially canned food. Instructions in a tested recipe always supersede any general safe canning rules.
