I cooked these indirect on my grill for about 5 hours at 250 F, no wrap. The binder was a Carolina style vinegar and red pepper sauce, and the rub was 2 parts black pepper to 1 part salt. I used B&B lump charcoal and one oak chunk. I sprayed them with ACV about every 45 minutes.
They cooked really fast and were fall-off-the-bone tender at the 5 hour mark. The flavor and texture were perfect! Next time, I’ll aim for a lower cook temp and see if I can get a little bit better bark.
