This was really simple to make and came out really good! I loosely followed a recipe I saw on instagram (sorry I can’t find it) but here’s what I did:

– Roughly cut up a medium sized yellow onion
– peel 3 garlic cloves
– peel and dice half of a medium sized butternut squash.

Add to a pan with parchment paper, season with salt, pepper, garlic powder, onion powder, and Italian season. You can also add a few leaves sage. Roast on 375° until the squash is tender.

When the squash is done let it cool for a bit before adding to a food processor or blender. (If you added the sage remove it from the pan before blending)I added a bit of water to the food processor just so it would blend better. It doesn’t need to be completely smooth.

I boiled about 1.5 – 2 cups of orzo.
While the orzo is boiling chop up a few leaves of kale and sautee in a pan with butter until the kale is cooked.

In a medium sized sauce pan add the squash puree with some veggie stock or water, cook for a few minutes then add in some heavy cream. Add in the kale and orzo and you’re done. I added feta and chopped walnuts to mine.
