This is a cream of lobster soup – very nice, I'm sure, but it really isn't Lobster Bisque.
Need to start with a broth made from the lobster shell and the water you used to cook the lobster. Better Than Bouillon sells a lobster base if you can’t make your own. A few more spices, like Old Bay, or fresh thyme, parsley etc. would improve this. Fresh shallots, garlic, fennel, and grated carrots can be added and either strained out at the end or puréed in with a hand blender.Adding a touch of tomato and paprika helps too.
Is there another herb I could use rather than parsley?
