This is the third time I’ve canned [this](https://www.bernardin.ca/recipes/en/Station_hot_sauce.htm?Lang=EN-US) hot sauce recipe and the only time I’ve had any problems. I had to suddenly go get my kid from school in the middle of processing, so I shut off the stove and left the jars in the water. When we got home I turned the heat back on, brought the water back to boiling, and restarted the processing time. I did the 5 minutes off the heat before I pulled the jars out of the water. When I pulled the jars out they started doing their best volcano impressions. All the jars appear to have sealed. So my questions are: 1. Is this siphoning? 2. Is this a result you’d expect from the way I had to mistreat my hot sauce?

    It does not look like you have enough headroom. I thought you are supposed to have like a 1/2 inch.

  4. This happened to me too!! My base recipe said 1/4″ and I had this happen. Took out a tablespoon from each jar and had better luck, but still some siphoning.
