    We also made/found this mistake. Very watery beans and took forever to “thicken”.

    It’s probably about the surface area of your sauce pan and evaporation. All of the times you add water, it’s going to be an approximation anyway(add as much as you want for your tastes, and adjust as necessary), except maybe cooking rice.
