SOFT AND CHEWY PEANUT BUTTER COOKIES

Ingredients:
1 cup creamy peanut butter
1/2 cup (1-stick) unsalted butter (softened)
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon sea salt

Instructions:
Preheat oven to 350 F. Line 2 baking pans with parchment paper or use a silicone mat.

In a large mixing bowl, cream together the peanut butter, butter, sugar and brown sugar. Beat together until smooth & creamy using a stand mixer or hand mixer.

Add the egg and vanilla extract and continue to mix until well combined.

In a small mixing bowl, whisk together the flour, baking soda and salt. Stir in the flour mixture to the butter and sugar mixture and mix until well combined.

Use a cookie scooper or spoon the dough into 1 inch balls.   

Using a fork, press down on each ball of dough to flatten, creating a criss-cross pattern.

Bake for 8-10. Do not over bake. Let cool on the baking sheet for a few minutes and then transfer to a wire rack.

  1. I baked those cookies the 1st time and they were good, so on my 2nd batch I used 2 cups of PB, Chocolate Chips and they were delicious. I didn't take away from the recipe, I just added to it.

  2. I’m reading the comments and I wanna know where did I go wrong. I made these tonight and followed the recipe to the T. Cookies weren’t horrible but not a real peanut flavor. Is there a certain brand peanut butter I should have used? I loved how they were soft and the texture just wasn’t a real peanut butter flavor there. Please let me know where I went wrong or what I could do differently thanks. And I love ur channel!

  5. I love making cakes and cookies. when I get that craving for something sweet. Question should I let this set in the fridge for a while before I bake it. . because if I were to do this it will eventually fall apart. when it goes into the oven.

You can actually put your cookie dough in the refrigerator for 30 to 40 minutes so that the flavor deepens and also even though her cookies are light I personally would say don't cook it no longer than 8 to 9 minutes they're perfect that way and they're not too crunchy on the ends but great recipe..

  18. I just made these and they came out amazing! Even with natural peanut butter from Trader Joe’s and I was able to get a great batch. You just have to skip the rolling into a ball part and just actually form the shape of the cookie. My family and I love the soft chewiness!
