Why is it lightening in color when cooled? Super hot on left, right is more cooled. Just curious if anyone knows why

    One thing I’ve noticed with lavender and blueberries is that their coloration comes from acid sensitive chemicals. My lavender and my blueberry lemonade both turn pink.

    In a grape the acid is in the fruit, and the pigment in the skin. You can make white wine from red grapes if you’re careful about the pressing.

    So I suspect the heat is affecting the chemical reaction that turns some of the pigments pink in acid.
