  1. parmesan isn't vegetarian, it has animal fats in it. an alternative that tastes identical is 'italian hard cheese'. it tastes exactly the same but it's vegetarian.

  3. Easier to throw the slices on a baking sheet and bake or broil them all up at the same time. Works like a charm. Good recipe.

  5. Laura – I'm Italian and I need to ask you this (*because I'm guilty of doing this) have you ever hit yourself in the face when you're talking with your hands? I have -muahahaha When I did that my Italian momma laughed and said – uhoh – you're hands are stuttering!!!! #italianproblems

  7. Good recipe, if you can find eggplant from Sicily it is less bitter than the ones from Italy or California. They are not quite as big, but they have appx. 1/4 of the seeds as the one in this video, and the seeds are bitter also, as the peel. There is appx. the same seed difference between the Sicilian eggplant vs. the others, as there is between a seedless english cucumber(still has a few seeds) and a regular cucumber

  8. I was taught to slice, salt and put a weight on the eggplant over a colander to let the bitter juice out.

  9. I've just made the heavier breaded version for the first time, it's in the oven now. I couldn't properly roll them, they were too hard. Maybe I breaded them too much, or maybe they were too thick. Let's see how they come out 🙂
