Vegan Zucchini Fritters & Tzatziki Sauce ๐ฑโจ

(7 fritters with sauce each 103cal/5P/7C/4F):
-4 small zucchini + 1 Tsp salt
-3/4 cup (90g) (chickpea) flour
-1 Tsp each salt, pepper and garlic powder
-2 scallions and a handful cilantro, chopped
-2 Tbsp oil for frying
Tzatziki:
-1 cup (250g) vegan yogurt
-1 Tbsp each olive oil abs lemon juice
-salt, garlic and pepper to taste
-1/4 cucumber abs a handful full, chopped
SHRED the zucchini, sprinkle over salt and let it sit 5-10mins/SQUEEZE OUT all the water and COMBINE with the remaining ingredients/SHAPE into 7 patties and fry in hot oil/MIX UP all ingredients for the tzatziki
