Remove The Seeds For Smoked Salmon Cucumber Bites:

Remember to scoop the seeds out of the cucumber slices but don’t go all the way through so that it still has a bottom so that the smoked salmon filling doesn’t fall out.

The divot in the cucumber slice creates a pocket to fill up with salmon ingredients. It also keeps the cucumber from getting soggy because the wet seeds have been removed.

Variations on Cucumber Smoked Salmon Bites:

Like lemon? Squeeze a little fresh lemon over the top right before serving.

Fresh lemon juice in this recipe is delicious but the lemon also dulls the pink salmon’s vibrant pink color, making it less appealing as an appetizer if it sits too long.

Trying to simplify? Leave out the fresh herbs, caper, or the mustard if you forgot to get them. Cucumbers and smoked salmon is a classic and simple appetizer without them.

Love cream cheese? Add a smear of cream cheese on top of the cucumber slice before adding the smoked salmon mixture. Otherwise, enjoy this delicious smoked salmon appetizer without cream cheese or any dairy.

Serving Size: 6 (3 each)

Ingredients:

-2 large English cucumbers
-¼ lb smoked salmon, chopped
-3 Tbsp red onion, finely chopped
-2 tsp dijon mustard
-1 ½ Tbsp capers, drained
– pinch black pepper
-1 Tbsp e.v. olive oil
-2 Tbsp fresh dill, chopped
-3 Tbsp fresh parsley, finely chopped as garnish

Instructions:

-Slice cucumbers in ½” thick rounds (should have ~ 18 slices) and lay out on a platter. If there are a lot of seeds, you can scoop out a little divot in the cuke, so the mixture stays contained better & doesn’t become watery.

-Mix together all ingredients except cucumbers and parsley in a medium bowl. Add salt to taste.

-Scoop 1 tablespoon (a small mound) on each of the cucumber pieces.

-Sprinkle with parsley garnish.
