Open flame and roast the eggplant directly on it, best way to get rid of the acidic raw flavor of the eggplant and definitely faster. My das has been making it like that since I was a kid and haven't tasted anything better than his baba ganoush.

so i assume it takes 25mins of work, but letting it sit salted will at least take half an hour, right? also in the oven for another 20 mins at least…any educated guesses? i suck at cooking
