Ingredients:
1/2 pound smoked turkey kielbasa or Polish sausage, sliced
1 pound potatoes, peeled and cubed
2 cups shredded cabbage
1 large onion, chopped
1 can (14-1/2 ounces) reduced-sodium chicken broth
3/4 cup water, divided
2 tablespoons sugar
1 teaspoon caraway seeds
1/4 teaspoon pepper
1 can (16 ounces) kidney beans, rinsed and drained
3 tablespoons cider vinegar
2 tablespoons all-purpose flour
Directions:
In a large saucepan or nonstick skillet, brown sausage over medium heat. Add the potatoes, cabbage, onion, broth, 1/2 cup water, sugar, caraway seeds and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender, stirring occasionally.
Add beans and cider vinegar; cover and simmer 5-10 minutes longer. Combine flour and remaining water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

My advice:
I skipped peeling the potatoes.
Don’t overdue it on the caraway seed, it’s a very potent flavor and a little goes a long way!
A splash of fresh lemon juice at the end helps liven it up.
I also added 1 cup of farro (about 30 minutes before it was done) and 2 cups of frozen peas (10 minutes before done) for extra bulk and to help stretch the soup all week!

That’s like the cheapest bigos I’ve ever seen. You substituted 80% with water. Hehe
This was my first time making this.
I am happy with how well it turned out, but next time:
I will substitute the farro for one cup of rice. The farro fell apart and became to soggy.
For extra flavor I recommend frying up bacon, and then using a little bit of the fat for frying the sausage. (Make homemade bacon bits to add for Garnish)
Corn wouldn’t be a bad addition
I felt the caraway was overpowering. I will use half a teaspoon next time.
I will also go half apple cider, and half white vinegar next time. The soup wasn’t tart enough for my liking.
A piece of a toasted baguette rubbed with olive oil would pair well with this.
A homemade grilled cheese (or ham and cheese) sandwich would compliment it well and make for a full course budget meal!
I will also recommend going with the best quality sausage you can afford. I used cheaper stuff on sale this time. I think a better quality meat would have elevated this to a fancy meal I’d be proud to share.
Edit: I also used a pinch of dried basil, and 2 teaspoons dried parsley to add some green to it. I think fresh herbs of your choice, especially some green onions, would further elevate the meal!
I also recommend cutting sugar to just one teaspoon.
If you want a sweeter soup I’d suggest maybe an apple peeled and finely chopped up?
