How To Make Greek Skordalia
5 medium size potatoes
cold water
5 peeled garlic cloves
1/4 cup boiling water
1 tbp salt
2 tbsp white vinegar
1/2 cup olive oil
Garnish with parsley

You can make it exactly the same way but add a bit of lemon as well & crushed almonds as a lot of people make it this way also
