
Used Smoke and Sizzle from FlameTechGrills for the airflow redirection, charcoal barrier and as water pan. Also used SpiderGrills Venom to keep the temp control. I ran out of charcoal after 14 hours on Kettle and finished the rest of cooking in Oven.
Rested it for an additional 3 hours.

How does that method compare to the snake method on the kettle? I have always done the snake method for my slow cooks but curious if it’s worth getting a separator like that instead.
