Interstellar still out of this world

My first time back since a few years ago when they made the big Texas Monthly list. Wait wasn’t really that bad. The line was just to the end of the sidewalk when we got there about 1:00 and we were at the counter in 20 or so minutes.

Got a 1/2 lb of brisket, tejano sausage, peach tea pork belly, and a few pork ribs. Among the meats, the pork belly was the star. So tender and the fat just melts in your mouth. Perfect dunked into the tangy mustard sauce. The sausage was also amazing. It was a special of the day sausage made with chiles and Oaxacan cheese. Just really flavorful and special. The brisket was great –very smoky and tender. The pork ribs were probably the weakest of the meats. They were still good, but the fat just hadn’t fully rendered out so it gave them a lardy mouthfeel.

The sides were all amazing — smoked Gouda Mac and cheese with perfectly al dente pasta (usually Mac and cheese at BBQ places is cooked to mush), smoked scalloped potatoes, and complimentary charro beans.

Not pictured is dessert – a chocolate chip Blondie and a scoop of horchata ice cream. So, so good.

All in all just as great as it was when it was my go-to sleepy lunchtime bbq joint. I always told my wife that one day they would be famous and there would be a line around the block every day. Sure enough on the day after they made #2 on the Texas Monthly list there were probably 150 people in line at opening time, and I haven’t made it back since. So today we finally decided to take the plunge. So happy for John and company and all the success. Wish we hade come back sooner — it was well worth the modest wait.

Not really. Went a few months ago. Still good but not great. Line was still long.

What’s up with places being so damn stingy with their pickles? Went to Valentines yesterday and only got two pickles.

People still love to dunk on this place, I think, simply because it made “the list”. It’s truly spectacular barbecue and anyone who disagrees can go eat at Bill Miller.

Looks good. But I’m done paying $40 per pound for brisket. I can get a prime ribeye for half the price. BBQ supposed to be food for the working man. Made from cheap cuts. Far from it now. I can buy prime ribeyes at Costco for $17 a pound and grill them at home

I don’t eat BBQ & go there with ppl just for the potatoes (they eat bbq). They are so damn good.

Sigh. I remember when this place was chill. Thrilled they are busy but wish I could still roll up at my leisure. Best barbecue in Austin by a mile. Not even close

They never cook enough & are always sold out

Bro this place is expensive AF and their mac and cheese is awful. Brisket is good but not worth going back for IMO.
