I’ve never canned whole peppers before. I keenly aware now that next time I need to “poke and soak” them in the vinegar to get the air out of inside of peppers. All that air came out into the head space of the jar and even though sealed most have a significant air space. Will the peppers be okay (safety OR taste) where they’re sitting above the liquid?

I don’t store upside down, I did that for photos to see the extent of air space without the rings in the way. 🙁 I think I have one that’s okay.

    If you followed a tested recipe (including how to prepare the peppers) and this was the result, you’re fine. But if, for example, the recipe said to cut slits in the peppers and you didn’t, there could be a problem. The headspace doesn’t look too bad to me if the process was safe. What recipe did you use?

    I’ve had this happen to me several times. If the seal is good (you got a good pop!) then just leave the rings on and lay the jars on their sides. Rotate a quarter turn each week and try to use within six months. Note that this is not a recommended method but the alternative is to either toss them or re-can them.
