Artichoke hearts, fava beans, and scallions come together to create this beautiful and healthy and very green stew. If you can find frozen artichoke hearts and frozen fava beans this meal will be on the table in under 30 minutes!

INGREDIENTS
400g (about 10) artichoke hearts
400g (14 oz) frozen fava beans, shelled and peeled
1/3 cup olive oil
1 onion, finely chopped
3-4 garlic cloves, grated
5 scallions, thinly sliced
2-3 tablespoons finely chopped dill
Salt and black pepper, to taste
Pinch of crushed red pepper flakes, optional
ยผ cup fresh lemon juice
1-2 teaspoons cornstarch
INSTRUCTIONS
Cook the onion with the olive oil over medium heat until soft and golden. About 10 minutes.
Add scallions and cook until soft. 3 minutes.
Add garlic and warm through 20 seconds.
Add the frozen fava and artichoke hearts.
Pour enough water to almost cover the vegetables.
Season with salt, pepper, and red pepper flakes.
Bring to a boil. Reduce the heat to medium-low and cover the pot.
Cook until the artichoke hearts are fork-tender.
In a small bowl, combine the lemon juice with the cornstarch and whisk together until smooth.
Add some hot broth from the pot and whisk together. Pour the mixture into the pot and add the dill. Mix together and cook until the stew has thickened. About 3 minutes.
If the stew is too thick, add more water to get it to your desired consistency.
Taste and adjust seasoning if needed.
Serve with more olive oil, toasted bread, and lemon wedges. Enjoy!

TY sweet Dimitroula mou! I do have the frozen artichokes that I''ve been wanting to get rid of for quite a while now. I'll try to make these since I gotten canned beans from my pantry. Having canned foods makes a huge difference especially during this pandemic madness. Staying home saves lives.

This looks so good! It reminded me my friend used to make an appetizer where she would mix feta, chopped Kalimantan olives, roasted red pepper with lemon an dill then scoop it into an artichoke heart and put them under the broiler. I totally forgot about artichoke hearts โฅ๏ธ Theyโre sooo yummy. I think they call them artichoke bottoms here. We get them in a can.

Fava beans are found everywhere in Quebec. Through the year canned, frozen or dried and in August fresh ones. Grew up with it cooked as a soup with barley…amazing bean! Will try your recipe this weekend
I substituted white beans and cooked them like I do for fasolada. Soak-boil for a 10 minutes- pressure cook the beans for about 20 minutes. I didn't want to run around looking for Fava beans. Plenty of dill and I also added a little oregano because I like it. + I had some mushrooms that needed to be used. Tastes great!! (Doesn't look as fancy as yours in that nice blue bowl)
Can I use Lima beans instead?

D. If you want to eliminate the corn starch add a few more fava beans and blend them with the lemon and it will thicken up fine.
