Smoked chicken rocks & is super easy, it can then be used as about anything. Hard to miss with brisket also.

I would say without a pit master pulled pork is your answer. It’s the most forgiving and versatile. Put it on a burger, potato, Mac and cheese, sandwich, even tacos or nachos.

Smoke pork butts. You can make a variety of things with it. Pork nachos, pulled pork sandwiches, pulled pork sliders. When I had my kitchen we sold a ton of it. Smoked chicken too. Great for nachos and sandwiches as well as salads.

Smoked Cheez-its. Smoked Cream Cheese. Last a long time so little to no food waste. Very easy.

As someone who works in the c-store industry but not for a gas station I think the key is in the name, convenience. I want my food from them to be easy to carry and eat on the go. Smoked chicken wraps, pulled pork wraps. There’s nothing wrong with doing brisket like others said but make it a limited time menu item on weekends only or like the first weekend of every months. Something consistent people can count on.
As far as unique things I love the pastrami idea someone said! I’d also say if you are already doing turkey sandwiches learn how to smoke your own turkey breast and slice it fresh for sandwiches. Can get a killer following off of quality food at convenience stores.

You say it’s not selling fast enough, are you just offering it as a sandwich?
You said you had it cooked every day, maybe make it a special thing. One day a week, you make smoked stuff and offer it a few different ways and when it sells out, it’s fine.
You said it’s a gas station convenience store, how about bbq meat, egg and cheese sandwiches the next morning?
You mentioned grab-and-go stuff works best, maybe wraps with smoked chicken inside?

If you have a deep fryer, smoke up bulk batches of chicken wings, then fry in smaller batches to crisp them and sell grab and go 6 packs. Smoked sausages would also be a pretty good grab and go option, a quality alternative to the ones on the rollers the gas station might have. Some of the best brisket I’ve had came from a gas station bbq storefront off of a highway in Florida
