  4. G🍄🍄D Day 🧑‍🍳 Chef. MMM MMM MMM. Those look fabulous. You really know how to prep the mushroom, so many places I've worked do not take the time. Cook'em drain and dry. I've seen them done with raw mushrooms and they become a watery mess. Loved your stuffing and the topping. I do the same with a seasoned crumb topping. Around here in Amish Land Pa all the restaurants do crab 🦀 stuffing, BLAH. And you have to charge a lot. I like sausage you used. When I was in NYC I would get a chicken sausage with broccoli rabe, roasted red pepper and parmesan cheese. I also used the stems but added ricotta cheese instead of cream cheese. A low budget stuffing I make is the stems, chopped spinach and Genoa salami and lots of Parm and mozzarella. Crumb topping.   9. Made these today with 2 differences. I used turkey sausage for the meat, and I used pork panco instead of regular Japanese panco. These are so yummy!!! Thank you for the recipe!
