A splash of extra virgin olive oil brings everything together to make a gloriously simple salad that everyone will enjoy – give it a go!

2 Cups of Cous Cous
2 Cups of Boiling Water
1 Continental Cucumber (diced)
250g of Cherry Tomatoes (quartered)
1 Large Pomegranate
1 Cup of Roughly Chopped Flat Leaf Parsley
2 Tablespoons of Lightly Toasted Sesame Seeds
1/3 Cup of Extra Virgin Olive Oil
Salt and Pepper

Preparation Time: About 15 minutes (plus cooling time)

SERVES 8 (as a side dish)
