Pomegranate Cous Cous Salad is a fabulously festive side dish, perfect for Christmas or any time of year! Cous Cous is combined with cucumber, cherry tomatoes, pomegranate and fresh parsley. A splash of extra virgin olive oil brings everything together to make a gloriously simple salad that everyone will enjoy – give it a go!

2 Cups of Cous Cous
2 Cups of Boiling Water
1 Continental Cucumber (diced)
250g of Cherry Tomatoes (quartered)
1 Large Pomegranate
1 Cup of Roughly Chopped Flat Leaf Parsley
2 Tablespoons of Lightly Toasted Sesame Seeds
1/3 Cup of Extra Virgin Olive Oil
Salt and Pepper
Preparation Time: About 15 minutes (plus cooling time)
SERVES 8 (as a side dish)
All measurements and temperatures are in Australian Metric.

Wow I hate cous cous but with this recipe might have to try it out. How would i go about making this salad to start out with less cous cous and more veggies until I get used to the cous cous any tips?
