#tzatziki is a popular Greek yogurt-based #sauce that’s often served with grilled meats, vegetables, or as a dip for pita bread.
Ingredients:
2 cups Greek yogurt
1 cucumber, grated and drained
2-3 cloves garlic, minced
1-2 tablespoons extra virgin olive oil
1 tablespoon red vinegar
1 tablespoon chopped fresh dill (optional)
Salt and pepper to taste
Instructions:
Start by grating the cucumber. You can leave the skin on or peel it, depending on your preference. After grating, place the cucumber in a fine-mesh sieve or cheesecloth over a bowl to allow excess moisture to drain. You can also sprinkle a little salt on the grated cucumber to help draw out the moisture. Let it drain for about 15-20 minutes.
In a mixing bowl, combine the Greek yogurt, minced garlic, olive oil, vinegar, and chopped dill. Mix well to combine.
Once the grated cucumber has drained, use your hands to gently squeeze out any remaining moisture. Add the grated cucumber to the yogurt mixture and mix until well incorporated.
Taste the tzatziki and season with salt and pepper according to your preference. Remember that the flavors will develop over time, so don’t over-season at this stage.
Cover the bowl with plastic wrap or a lid and refrigerate the tzatziki for at least an hour before serving. This allows the flavors to meld and the sauce to thicken.
Before serving, you can drizzle a little extra olive oil on top and garnish with a sprig of fresh dill or mint.
Serve the tzatziki as a dip with pita bread, alongside grilled meats, or as a sauce for gyros or souvlaki.
