I pressure canned bone broth per the Ball Canning book recipe a few months ago. I strained it a few times, but I seem to have missed some fat and I’m curious if it’s still okay to consume?

I think it would be impossible to remove all of the fat from the broth. If you followed the process as outlined by Ball or the NCHFP, I wouldn’t worry about it.

It is absolutely safe. I never worry about it.
