**Ingredients:**
**For the Cookie Layer:**
* 1 ½ cups all-purpose flour * 1 cup unsalted butter, softened * ½ cup granulated sugar * 1 tsp vanilla extract and/chocolate * A pinch of salt
**For the Barfi Layer:**
* 2 cups sweetened condensed milk * 2 cups grated or powdered mithai barfi (traditional Indian sweet) * 1 tsp cardamom powder * 1/4 cup chopped pistachios, almonds, or cashews for garnish
**Instructions:**
**For the Cookie Layer:**
1. Preheat your oven to 350°F (175°C) and line a 9×9-inch (23×23 cm) baking pan with parchment paper, leaving some overhang for easy removal later. 2. In a mixing bowl, cream the softened butter and granulated sugar together until smooth and creamy. 3. Add the vanilla extract and a pinch of salt, then mix well. 4. Gradually add the all-purpose flour and mix until you have a crumbly dough. 5. Press the cookie dough evenly into the bottom of the prepared baking pan. 6. Bake for about 20-25 minutes, or until the edges are lightly golden. Remove from the oven and allow it to cool completely.
**For the Barfi Layer:**
1. In a non-stick pan, combine the sweetened condensed milk and grated or powdered mithai barfi over low heat. 2. Stir continuously to avoid lumps and ensure it doesn’t stick to the bottom of the pan. 3. Add the cardamom powder and continue cooking until the mixture thickens and leaves the sides of the pan. This should take about 10-15 minutes. 4. Once it’s thick and starts to come together like a dough, transfer it onto the cooled cookie layer. 5. Press and spread the barfi mixture evenly over the cookie layer. Use a spatula or the back of a spoon to smooth the surface. 6. Sprinkle the chopped nuts evenly over the barfi layer and gently press them down. 7. Allow it to cool and set for a few hours or refrigerate for quicker setting. 8. Once it has set, use the parchment paper overhang to lift the whole creation out of the baking pan. 9. Place it on a cutting board and use a sharp knife to cut it into squares or bars. 10. Your Cookie Barfi Bars are now ready to be enjoyed. Store any leftovers in an airtight container in the refrigerator.
These Cookie Barfi Bars are a perfect blend of crunchy, buttery cookie and the sweet, aromatic goodness of traditional Indian barfi. They make for a unique and delightful treat that combines the best of both worlds!
