First time doing long term canning. Is it safe for some pieces to be slight bit out of vinegar?

  2. Yep. If it bothers you, you can shake them up every once in a while. If you followed a safe, practicing method for pickling, Dustin should be good for 2 to 3 years years. Just make sure you follow safe practice procedures, and everything will be good.
