I made kimchi for the first time and also tasted it for the first time. I kept 2 days at room temperature and 2 days in the fridge. I’m wondering if this is ready…I hope it hasn’t been spoiled 😭

    Kimchi is ready whenever you want it to be ready. I like my kimchi at any stage of fermentation. The only time it goes bad is when the cabbage isn’t submerged under the paste/brine. I make my paste runny because I want lots of juice.

    So eat some now.
