He's referring to the already grated Parmesan cheese that comes in a jar or bottle. It's not as fresh and flavorful as "real cheese" (a wedge of cheese).
I'm vegan and I enjoy a lot of this channel's videos but I don't subscribe because of all the anti vegan talk. There's no reason to be so judgmental about what people eat in their own home! <3 I know this video is 2010 but I recently unsubscribed 🙁
