I made some chipotle ranch and had some frozen taquitos. Decided to try some with enchilada sauce and cheese melted on like some back alley gas station enchiladas or something… Delicious.

I’ve made ghetto enchiladas like those on the left, only I baked them. They’re good, especially if you get a really good enchilada sauce (Trader Joe’s is great for this).
