I just made this, I went light on the onion, using the remains of one I had in the fridge. Also, I didn't have fresh thyme so I tossed in about a 1/2 tsp of dried. It tastes pretty good, came out thick enough to use as a sauce.
Just a quick question. Why would you get rid of the beautiful mushrooms water that leaked out. That’s sooo full of flavor. That’s the best part of the soup

Actually, the energy in mushrooms does come from the sun, but they don’t photosynthesize themselves, they break down carbohydrates made in green plants by photosynthesis! They eat dead things, like we do! Fungi are vital parts of the ecology, breaking down all kinds of plants and trees to recycle them! Oyster mushrooms even trap soil animals, and eat those! Fungi are a fascinating Kingdom of life! Delicious, too!
I just made this and instead of canned stock I made it with homemade chicken bone broth (this is the kind that is thick with collagen) and boy did it come out good!! Oh, I almost forgot, I am a mushroom forager and made it with oyster mushrooms I collected in the woods yesterday, with some dried wild mushrooms I picked last year. Wowser!

I have made this now twice in two weeks and it’s lovely. The only difference is I use big flat mushrooms ( like the field mushrooms) and chestnut mushrooms, but the main recipe is the thing that makes it soooo tasty! Thank you for the recipe Chef, its a firm favourite with us here in the UK!
Thank you for such a delicious and easy recipe. Instead of 1 cup of water I added 1/2 cup of Sherry and just 1/2 cup of water. The wonderful thing about your recipe is that you can play around with it to your own liking and it's still fabulous.

I use half and half. Also add some Brie cheese. It really completes the flavor`

But you can grow mushrooms in a cupboard, no moon in there. I don't know where they get energy from but they do fine without the moon

I decided not to blend the soup, and of course sliced the onions and garlic very thin, and it was just amazing!
