I grew some yellow tomatoes that were disappointing in flavor so wanted to use them up where other flavors could pick up the slack

    Recipe:

    chopped onion

    chopped bell pepper

    2 jalapeno peppers chopped

    4-5 medium sized tomatoes

    potato diced

    can of black beans drained

    olive oil

    chili powder, cumin, kosher salt

    tortillas for serving

    Heat 2 TBS olive oil in a pan. Add onions and all peppers.

    In a microwave safe bowl add diced potato to some water and microwave 3 minutes to soften. (Can skip this step and add potatoes directly to pan but they will take longer than the rest of your vegetables).

    To the pan of onions and peppers add cored and peeled tomatoes. They do not have to be peeled perfectly. You can just scoop out the flesh and throw it in the pan. Crush the tomatoes with your spoon. Add spices. Simmer a few minutes.

    Drain microwaved potatoes. Add drained potatoes to pan. Add drained black beans. Continue to simmer to allow flavors to blend and ensure potatoes are cooked through.

    Warm tortillas on a griddle or in microwave and serve.
