I make my stuffing with pumpernickel bread, pecans, onions, garlic, chicken stock, seasons.
Gotta have safe with that too.
leave out the eggs and cook all that in a cast iron skillet. stir it every 15 minutes. until it is done just use 2 eggs and one can of cream and 1/3 cup of oil and 2 cups of corn mean. do not use flour. it already has flour in it. put in a good hot cast iron skillet. like you all ways do. Do not be scare to use lots of butter on it like you would if it was an ear of corn., Salted butter. Old fashion corn bread. Only reason they use sugar all the time in the 1800's was because they did not have a way of keeping everything from spoiling. sugar help keep longer. and salt.

Holy smokes!!! 2nd time making this dish but first time using your cornbread recipe and words just can not do your hard work justice!!! We followed both recipes to the letter and the stuffing is simply the best we have ever had so a big hearty thanks and Happy Thanksgiving! Just an FYI, we used just a tad bit more than two cups to get the consistency we wanted (per your suggestion about maybe not using the full three cups. We have, over the many years, tried a lot of recipes with some being very decadent. Yours is a simple and super easy dish with flavors that none others compare with! This is now our 100% go to anytime we have stuffing (or cornbread)!!!
