This book is notorious for being flagrantly unsafe. The author repeatedly demonstrates that she does not understand the science of canning. Maybe you can put it on the shelf as a decoration, but if you care about safety, you should never use any of its recipes.

Also in general is it safe to pressure can anything I’d usually water bath can? Are there differences in how the product turns out that I should be aware of.

I did not know this wasn’t safe either, I received it as a gift and have only scrolled through it as I mostly can veggies and not meals etc. Even then I Google if they’re safe beforehand.

I recently reached out to her and the publisher (called and emailed) asking about whether the recipes were tested and which org. tested them, but neither of them responded. I took that as a sign that the publisher and author don’t stand behind the work.

Uh oh. I’ve been using the beef stew recipe, without clear jell of course, for years. It tastes better than the ball recipie.
