Great video. Great recipe. Great dish. There was even a little hidden humour in it. Using the wrong knife in the kitchen and then saying "… and I am not a professional cook" is really funny. Cooks are very particular about knives. That is why the usually spend a lot of money on having their own set of knives. At school we once watched a TV personality (a famous gourmet) cooking something in a taped TV show and when that TV star used a too little knife our teacher was screaming through the class "… and that is how you see that he's no professional cook because we always use the right knife!" Seriously, chefs can get irate if they see somebody under their watch using a bad or a wrong knife.
This made me LOL ..same old-style cooking methods as my Memere!! (Although the narrative gives some info) Your Mum cooks with no measurements, cooking by eye..I once asked my Memere "How much do you use?"…She showed me her palm with some of the ingredient saying," This much!"….To this day I still can't recreate her dumplings! Love this video- and the Risotto looks d-lish, will have to try!!
Curiosa versione. La più diffusa prevede l'uso dei porcini oppure dei gallinacci, e dello zafferano. Ma ci dono tsnte varisnti, snche con il vino rosdo, con il pomoforo, con i frutti di mare, con il radicchio, ecc.
