This turned out nothing less than incredible! The roasted peppers, savory spices and slight sweetness were all showing. I substituted some hard to find ingredients in my situation (the Aleppo pepper with chili flakes, and pomegranate molasses with blackstrap molasses) and the taste turned out amazing. Before making this recipe, I thought the consistency would be given mainly by the mushy bell peppers, but after roasting and peeling, little was left from half a kilogram. I think the walnuts made up the consistency (not just the flour resulted from the blending process, but also the oils in them emulsifying everything). The main aspect I want to remember for next time I will be making this recipe is to necessarily cut the bell peppers in half. I cut them in 4 pieces (to get the seeds out properly), and some were so small, they turned out as dry chips after roasting and I could not peel them.
I see this recipe is not far from the original!
I do have sumac in my spice stash, could I use it instead of the lemon juice or it wouldn't make much of a difference?
