Ingredients
– Collard Greens
– Beets (precooked)
– Parsley
– Tahini Paste
– Honey Ginger 1 Tbsp
– Garlic 3 Cloves
– Half Lemon
– 1 cup water
– Sea Bass or Snapper (do not use fish that is too soft when cooked)
– Flour
– Corn Flour

Directions
1. Chop collard green
2. Cut beets into bite size pieces
3. Finely chop parsley
4. In a separate bowl, mix beets, parsley, 1 Tbsp of honey ginger, and pinch of salt.
5. Mix 1 cup of Tahini Paste, 2 clove of garlic, pinch of salt, and half lemon squeezed into a blender.
6. As you blend the Tahini sauce pour 1 cup of water slowly. Also, it’s important that you use the blender on low to mid speed.
7. Pour flour and corn flour into a bowl or plate. 1 to 1 mix
8. Season fish with salt and pepper.
9. Coat the fish in flour and corn flour mix
10. Mince 1 clove garlic.
11. In a large pan, heat oil and garlic first.
12. Throw in collard greens once garlic is nice and yellow..
13. Cook the fish in separate pan
14. Enjoy once the fish is cooked.
