I’ve been making this chili and chili paste for 5 or 6 years now and I always clean out the chilis and dispose of the skin. I really hate the texture of skin in the paste, but I got a new blender and really gave it a long spin this time. I had left a couple skins in the mix, so I will see tomorrow how it works out. Does everyone else leave 100% skins on? I picked up 2 big chucks at Whole Foods today, so I thought I was ready to go but I see the new version of the recipe calls for instant cornmeal, but I picked up masa, per the first version. Dang it.
