Ingredients for loaf:
½ Cup butter or margarine ¾ Cup white sugar
1 Large egg 2 Cups sifted flour
4 Tsp baking powder 1 Tsp lemon juice
1/3 Cup, fresh orange juice and pulp Zest of one orange or 1 tsp
1/4 Tsp salt 1/3 Cup cranberries cut in half
Ingredients for icing:
1 Cup confectionary sugar ¼ Cup orange juice
1 Tsp orange zest
Method for loaf:
In a medium bowl add butter and sugar cream together. Whisk together egg in a small bowl then add with other ingredients.
Next add lemon juice and zest of one orange, mix together until combined.
Then add orange juice and pulp then sift together flour and baking powder, fold together until all mixed, cut cranberries in half and add to the batter, add more orange juice if needed.
Oil a loaf pan and add a piece of parchment paper, scoop batter into loaf pan and set aside for 5 minutes to let batter rise.
Pre-heat oven to 350ºF and set timer to 45 – 60 minutes for baking time, checking after 45 minutes, leave longer if needed or until golden brown. Check by touch or poking a knife in loaf.
METHOD for Icing:
Add all ingredients to a small bowl and whisk together, pour over the cranberry orange loaf, and enjoy with a hot cup of tea..…

Cranberry Orange muffins are my absolute favorite and I love cranberry orange relish with my turkey. The loaf looks delicious, but wouldn't last very long in my kitchen, and I live alone!
Thanks Bonita . Waiting for mine to come out of the oven. It sounds like you say a cup of butter in your video so you may want to add a note over that part clarifying it is 1/2 cup as specified in the recipe

Yummy! Cranberry & orange are so good together. Mom used to make cranberry orange pound are with a simple glaze but I've sadly lost the recipe.

For some reason I didn't get notified about your video. Love this bread, I make cranberry orange jelly with the whole orange like marmalade and whole cranberries and use it in thumbprint cookies. Use your bread recipes all the time.

Hi Bonita I hate to say anything negative because I have never had anything I made from this site not turn out. I just mixed up this recipe and the batter is so thick I cannot mix it with a wooden spoon or spatula. I added more juice but it didn't make a difference. I had to mix the cranberries in by hand and scoop in batter in the loaf pan by hand and press it down. I am sure this loaf is going to be a failure for me. I wonder if the recipe called for an addition of milk if there would be a difference. I am going to put it in the oven and bake it just to see what happens.
Hi Bonita, my daughter and I tried this recipe today and it tastes great but we had a problem. We made two batches and both of them sank in the middle. Any suggestions on what might have happened there?

Great recipe! Wish I could find those red mixing spoon and spatula that you use. They look sturdy. Mine are much too flimsy! Any suggestions where to buy them?
Hello Bonita! Last Friday we gave this loaf a try. It was very pleasant. What we liked the most was the acidity of the cranberries that balanced the sweetness of the bread. We didn’t even need the glaze. It was delicious as it was. We’re definitely making it again soon!
