Smoked some Alaskan sockeye recently for a delicious open faced sandwich inspired by a creation by Seattle sandwich shop “Layers”

Smoked salmon rillettes, dressed radicchio, fried capers, bread and butter onions, micro greens on rustic white como griddled in caper olive oil.

Side of bread and butter pickles and grainy mustard.

Very sofishticated.
