So damn good.
As the weather turns and the days get way shorter here in MN, I’ve found myself cooking a Sunday soup for my wife/in laws every week for the past month or so. It was my 11 year old nephews turn to pick and he chose beef barley. Once I read this recipe, I knew it was the one I was going to make. It turned out amazing. It pleased 7 people, ages 4 through 72.

I opted for short rib here (rather than chuck roast), and it was totally worth it. Adding the bones to the simmer really upped the beefy flavors and added a nice viscosity to the soup. I will be making this several more time this fall/winter.
