Proper headspace, not tilting the jar when removing it from the canner to place somewhere to cool, and not tilting the jar when moving it to store it. The quality of lids has fallen over the past three or so years, and any high acidic food content that gets on the underside of the lid does have the possibility of rusting and eating through the lid.
Always check your lids before putting them on your jars, to make sure they are new, unused, have the proper rubber seal, and no pitting, rusting, or other damage to the underside or top of the lid. Other than that, you can try to find better quality lids, or re-usable tattler(?) lids, or something like that which is deemed safe for canning. I’m sorry you lost your hard worked for product. 🙏🏻🦋

Lids should tolerate contact with product. I suspect that you were victim of pandemic and post pandemic era crappy quality. I’ve seen flats with scratches in the coating coming through in several brands. It sucks because we’re paying premium prices to lose product to low quality lids.

Only use Ball lids for real! Mom told me the same and I never had issues again. Grandma told her. I never have any to reseal after only using ball. If it was a messy batch I’ll rinse under the edge of the lids after they seal.

I bought these. They take some getting used to but they seem to have a better seal than the lids that they have been selling over the last few years.
