Roasted carrots, rice, and chicken thighs. Filling for the stuffed bell pepper + a little egg and cheese for breakfast burritos. Also planning on making a couple of stuffed poblano peppers later in the week with the same filling. Leftover broth from cooking chicken will become a soup starter.
