ERIŞTE (Erishteh) WITH WALNUTS&CHEESE RECIPE l Turkish Egg Noodles

In this episode I’d like to share with you ‘Erişte’ recipe, so easy to make and tastes amazing. These noodles are made in the villages during the summer then stored for the rest of the year. Packaged ones can be found in the local stores or supermarkets. You can serve erişte with a salad and some ayran on the side for a light dinner.

INGREDIENTS (serves 2)
3 cups erişte (or homemade egg noodles)
1 cup Turkish lor cheese (or drained ricotta)
1/2 cup walnuts
6 cups hot water
Salt & white pepper
Butter
Olive oil

DIRECTIONS
Toast walnuts in a large pan for 3-4 minutes, over medium low heat, stirring occasionally.
Transfer walnuts to a cutting board, let the pan cool.
Coarsely chop the walnuts.
Reserve 1-2 tsp chopped walnuts to garnish.
Heat 2-3 tbsp olive oil and 1 heaping tablespoon butter in the same pan, over medium heat.
Add erişte and sautee for about 3-4 minutes, or until some of them are golden brown, stirring constantly.
You can taste uncooked eriste to adjust seasoning.
Add 6 cups hot water, bring to a boil over medium high heat.
If erişte is not salty, add 2 tsp salt and mix.
Once boiling, cook for 5 minutes or until desired doneness.
Check for doneness then reduce heat to medium low.
Reserve 1/2 cup boiling water of erişte.
Add 1 cup cold water into the pan then drain.
Put the pan back on fire over medium low heat, melt 1 heaping tablespoon, (plus more to taste) butter.
Taste cheese to adjust seasoning then add into the pan and mix, reserving some to garnish.
Season to taste, depending on how salty the cheese is.
Add walnuts, mix.
Add about 1/4 cup reserved boiling water of erişte, mix.
Add drained erişte into the pan, mix gently.
Turn off the heat.
If not serving immediately, cover the pan leaving the lid ajar until the pan cools, then cover completely.
Make sure to add a dash of reserved boiling water before reheating erişte.
Transfer erişte into a serving plate.
Sprinkle reserved cheese and walnuts on top.
Garnish with some walnut halfs and 2-3 fresh parsley leaves, if desired.
Serve immediately and enjoy, it’s very delicious!
