This pasta recipe is inspired by the beloved ‘Caprese Salad’ and contains all of the quintessential ingredients of the Italian Mediterranean diet: fresh tomatoes, extra virgin olive oil, garlic, basil, and fresh cheese (mozzarella and Parmigiano Reggiano).

It’s a quick recipe that can be enjoyed as a fresh pasta salad or warm as a pasta dish. Ready in 30 minutes and so refreshing! Plus, you’ll learn how to peel tomatoes quick and easily 🙂

INGREDIENTS (SERVES 4)
mozzarella – fresh or water-packed 250 g (1/2 lb)
Parmigiano Reggiano cheese – 3 tbsp; finely grated
fresh tomatoes (beefsteak or similar) – 1 kg (2 lb ) or 1 large tomato a person
fresh garlic – 4 cloves 
olive oil extra virgin – 3-4 tbsp
tube pasta for 4 (penne or rigatoni) – 11 oz (320 g)
fresh basil – 4 leaves
black pepper – few pinches
fine salt – to taste
