In true middle Eastern Zaatar, Sumac is actually used. It is much much simpler. Thyme, Sumac, sesame seeds, and a bit of salt. You can always add some olive oil as a preservative. Just a very small amount. If you want to make it spicier, you can add some chili flakes, make sure you take the seeds out of it as it doesn’t look as appealing.
