Today we make the beef stroganoff recipe that I wish my mom made me as a kid. Beef stroganoff was always a little bland but anything over noodles I love. We fix all the issues today by using the braising technique and instead of using steak, we use short ribs and some high-quality mushrooms. The recipe is a dream.

  1. The recipe is wrong, it says 4 cups of stock, no way in hell. If you want soup maybe, you should only use half maybe 2 cups, that might even be to much. Seriously why does it say 4 cups??? It totally trashed my dish, I was at least able to somewhat recover by skimming off as much as I could and putting it into a large part and boiling both at the same time. I still lost a lot of flavor, so I ended up having to add bullion to give it some flavor back. Other than that, I was pretty good.

I learned recently that the classic french cooking encyclopedia Larousse Gastronomique says Stroganov/Stroganoff is deglazed with white wine, but I can't really tell the difference. BTW your Ft.   7. Mmmmm…….. I've never had this dish tbh…. But, if you ever wanna do me a favor…. I have a dish I make, that is akin to this, but the recipes I use all call for different things.
    When I make a new dish, and look at multiple recipes.
    I take elements from the ones that make the most sense to me.
    I make chicken paprikesh. It's allegedly Hungarian, but it's roots are similar to stroganoff I think.
    Some recipes call for bell peppers. Then Hungarians say, no no, not authentic.
    So I do it without them. But is that right. I dunno…
    I use a ton of hot Hungarian paprika, and just a small pint of sour cream.
    They say it's served over something similar to spazael.
    Or egg noodles. I usually do it over rice.
    If you could do an authentic paprikesh, id be very grateful
    Ift is delicious the way I do it, but if I could make it better…
