This pasta dish was invented by Sicilian migrants in Milan, using Sicilian ingredients with a long shelf life which they could take with them from home: anchovies and tomato paste!

    Hard to find a good selection of pasta shapes without going to a special Italian store and despite having one local the one in the next town has way more choice
    Recently found dececco have an online store so hoping to see what they have and if any shapes to keep an eye for?

  4. Need to try this. I LOVE anchovies. I remember my papa would break off bread, dip it in olive oil & put a couple of anchovies on it-he’d make one for me and one for him till there were no more anchovies left. I still do this.

  5. I just made this pasta today. Sugo all'Amatriciana used to be my favorite pasta dish. Pasta c'anciova just replaced it. Fantastic recipe.

  6. #MAFALDE di SAN GIUSEPPE..Mafalda pasta for St.Joseph's Day..full of symbols, since S.Joseph was a carpenter, the Mafalde shape represents his jagged saw, and the Breadcrumbs represent the sawdust…

  7. I made this on 18/4/22 and they were freaking delicious. Omg, this Pasta Assassina, and Alla Norma are my favourite tomato based sauces. I love Aglio Olio, but I also love Sardinian Culurgiones.

    I used mafaldine pasta…what a great texture!
    (It will be in my pantry from now on.)

    Everyone was a fan of the dish, including a recently more culinary adventurous 7 year old!

  9. Anchovies are just amazing. Use them to salt the food and give it that lift of umami.

    So many Italian dishes would be nothing without them.

    Another alternative is fillets of fresh sardines.

  11. Anchovies in Italian cuisine is more of a seasoning than an ingredient. It's like bay leaves in North American cuisine, when you don't use them, you know something's missing, but you don't know what.

Hi Eva, wife and I loved it on our weekend, made for family and they freaked out, pieces of anchovies, tried filets but still pieces, so used anchovy paste, added halved grape tomatoes and said something different lol. Grated aged asiago on top, kids loved it, I think anchovy filets worked better🤷, but in season halved cherry or grape tomatoes and fresh basil add a fresh pop.. tyvm

  14. If you have trouble with skin use an halogen lamp to heat the skin and cure it.If i have long pasta i break it in two,easier to cook, easier to serve.

  15. I made this last night & loved it! It reminds me of one of my favorite childhood dishes: pasta con sarde. (Mom was Sicilian). I will definitely make this again. (Also – should you ever feel inspired to make a pasta con sarde video, I would be very interested in your version.)
