Today we are making a Middle Eastern milk pudding called “Muhallabia”. It is usually made with rose water, but today my grandmother is making it the Moroccan way with orange blossom water. This recipe is super easy, super refreshing, and super delicious! It’s definitely a keeper!

2 things that may have happened: 1) you did not put enough cornstarch (assuming you are using the right product) 2) you did not let the milk boil enough. as the milk boils, the cornstarch will make it thicker. so you have to boil the milk long enough until you get the consistency you want.

Just a quick tip its better to mix the corn starch with some milk seperatley before adding it to the milk, this will stop it from becoming lumpy.
That is really tasty stuff. I had this in Israel, and they have a red syrup that is on top, with crushed almonds and toasted coconut mixture. There it is called Malabi, which is the same thing. This video is clear and easy to follow. I have subscribed.

In all the mhallabia recipes I check, the sugar is added at the beginning. I always add it towards the end, otherwise it always sticks to the bottom of the pan and burns. Any tips to prevent that from happening? (I use enamel iron pans. I don't use non-stick pans)

I tried the recipe and it was good. If I want to make a bigger batch like a double, should I double up on all the ingredients including the corn starch?? what about too much thickening with doubled starch? also should I double up on the orange blossom water or that will be too much?please advise .Thanks!
