BOURBON CHOCOLATE PECAN PIE RECIPE (DERBY PIE)

Preheat oven to 350 F.

1 – 9″ unbaked pie shell

1/4 cup butter, unsalted
2 ounces unsweetened chocolate

3 large eggs, lightly beaten
1/2 cup sugar
1/2 cup brown sugar
3/4 cup dark brown corn syrup or sugar can syrup
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
3 Tablespoons bourbon
1 1/2 cups pecans, chopped

1. In small sauce pan. over low heat…melt butter and chocolate together.

2. In a large bowl…add eggs, sugars, corn syrup, vanilla, salt and bourbon. Whisk well. Add melted butter and chocolate. Whisk well.

3. Add unbaked pie crust to cookie sheet (makes transporting pie from counter top to oven much easier). Add pecan to bottom of pie shell. Slowly pour pie filling over pecans.

4. Bake for 40-45 minutes.

5. Cool on rack 1-2 hours before serving.

TIP: Pie can be made 1 day before serving by storing (completely cooled pie) in airtight container.

  3. All my life I've been taught that those wonderful nuts are pecans, pronounced pe-cauns.  And pee-cans are what they use at night when you live up in the hills and don't have indoor plumbing.   (also known as "slop jars")  !!     🙂
